PEANUT BUTTER BANANA PROTEIN MUFFIN RECIPE using Promix Protein

Ingredients

  • coconut oil for greasing muffin tin

  • 2 cups flour (using King Arthur All-purpose)

  • 1/4 cup Promix protein powder

  • 2 tsp baking soda

  • 1/2 tsp baking powder

  • 1 tsp cinnamon

  • 1/4 tsp sea salt (using Maldon)

  • 1 1/2 cups mashed ripe bananas

  • 1/2 cup peanut butter

  • 1/2 cup honey or pure maple syrup

  • 2 eggs

  • 1/2 cup (110g) sourdough discard

  • 4 tbsp melted butter

  • 3/4 cup milk

  • 1/4 cup greek yogurt or sour cream

  • 1 cup chocolate chips (using Ghirardelli)

Directions

  1. Preheat oven to 425

  2. Grease muffin tin with coconut oil

  3. In a large bowl, whisk flour, protein powder, baking soda, baking powder, cinnamon and sea salt.

  4. In a separate bowl whisk mashed bananas, peanut butter, honey or maple syrup, eggs, sour dough discard and melted butter.

  5. Stir in Milk and yogurt

  6. Combine wet and dry ingredients (do not overmix)

  7. Fold in chocolate chips

  8. Fill muffin tin cups 3/4 full

  9. Bake at 425 for 5 minutes, then reduce to 350 and bake an additional 15 minutes

  10. Remove from oven and keep muffins in tin for an extra 5 min

  11. Cool miffins on a wire rack.

  12. Store in an airtight container for 4 days at room temperature or up to 3 months in the freezer.
